COCKTAIL MENUS 2008
Mango Daiquiri:
Garnish- Pineapple wedge and leaf, sugared lip
Glass- chilled Martini glass
Ingredients-
4 slices mango
35 ml white rum
12ml lemon juice
30ml sugar syrup
Method-
Add to blender with some ice, blend until yellow and smooth then add to chilled glass
Apple and Sage Martini:
Garnish- extra sage leaf
Glass- Martini glass
Ingredients-
4 sage leaves
12ml sugar syrup
35ml vodka
50ml clear apple juice
Method-
Muddle 3 sage leaves in shaker with sugar syrup, then add vodka and some ice, shake and strain into chilled Martini glass
Litchi and Ginger martini:
Garnish- slice ginger
Glass- Chilled Martini glass
Ingredients-
35ml vodka
25ml litchi liqueur
2 slices fresh ginger
20 ml litchi juice
Method-
Muddle the ginger with sugar syrup, then place in cocktail shaker, add some ice, and the vodka and litchi juice, Shake and strain into Chilled Martini glass
Queen of Limechilli:
Garnish- mint, lime and strawberry
Glass- chilled Tumbler
Ingredients-
1 Lime, cut into quarters
25ml strawberry puree
15ml sugar syrup
25ml cachaca
25ml strawberry liqueur
Method-
Shake all ingredients in a cocktail shaker with ice, roughly crush 2 handfuls of ice per glass separately, add to tumbler and then strain the mixture into the glasses over the ice, use two black straws to garnish
Kiwi and Cucumber Martini:
Garnish- 2 slices of cucumber (place into each other)
Glass- chilled martini glass
Ingredients-
1 fresh kiwi juices
4 slices cucumber
12 ml sugar syrup
25ml vodka
25ml cloudy apple juice
Dash lemon
Method-
Muddle or juice the cucumber and kiwi, add the apple juice or use fresh apple juice (place ½ apples, ½ kiwi and 4 slices cucumber in a juicer and juice)
Add rest of ingredients into the shaker and add some ice and shake, strain into a chilled martini glass.
Lemon grass and wild Chilli Martini:
Garnish- Red chilli whole
Glass- chilled martini glass
Ingredients-
1 lemongrass chopped and bruised
¼ red chilli deseeded and chopped (or use chilli and lemongrass infused vodka)
12 ml sugar syrup
25ml vodka
25ml cloudy apple juice
12ml apple liqueur
Method-
Place lemongrass and chopped chilli into mortar and pestle and crush or use infused vodka
Add apple juice and some ice and shake, strain into Cocktail glass
Toast and orange marmalade Martini
Garnish- zest of an orange
Glass- Chilled Martini glass
Ingredients-
50ml Jack Daniels
30ml orange marmalade
4 dashes bitters
12 ml sugar syrup
Method-
Place all ingredients in shaker with some ice and shake, strain and serve straight up
Ruby grapefruit and mint martini
Garnish- zest of grapefruit
Glass- chilled martini glass
Ingredients-
5 fresh mint leaves
12ml runny honey
30ml grape fruit juice
30 ml vodka
10ml lime juice
Method-
Muddle mint leaves with honey, add some ice and rest of ingredients and shake and strain into chilli Glass
Basil and Pineapple Long drink
Garnish- Basil leaf with 2 black straws, dash grenadine or black berry
Glass- long tall glass with ice
Ingredients-
7 basil leaves
50 ml vodka
12ml sugar syrup
12 ml litchi juice
50 ml pineapple juice to top up
Method
Place all ingredients minus the pineapple juice, Muddle the leaves in sugar syrup, add some ice and vodka and litchi juice, shake and strain into tall iced glass, top up with pineapple juice
